Unfortunately, the rugged terrain and hotel grounds are not best suited to guests with reduced mobility, although one villa has been adapted to improve accessibility. You can also call for a golf cart to take you between the spa, winery, restaurants and your room.

Our favourite rooms

In each terrace-toting villa, settle in with a glass from your wine cooler for fireside snuggles, head for a dip à deux in your plunge pool, or eye up the romance-inspiring backdrop of vast valley views. The Serenity Pool Villa is spacious, but the Winemaker’s Three Bedroom Pool Villa scales things up – coteries and clans can survey the vineyards below from this away-from-it-all hilltop house.

Poolside

You'll find two heated outdoor pools, tucked into the mountains. Admiring the vast views is appetite-rousing work, but you can refuel at Roka, the hotel's poolside food truck.

Spa

Weave your way under the botanical garden’s angular arches to reach the star-of-the-show spa, where treatments are inspired by local and Asian rituals, and scrubs, oils and face masks are whipped up from the native plants peppering the hotel’s grounds. After a treat-yourself massage or hydrotherapy session, saunter to the sauna, steam room or heated pool. The self-improvement continues beyond the spa with personal trainers and guided yoga classes; or go one step further with a spirit-cleansing temazcal experience.

Take your all-natural surroundings as colour palette inspiration – berry-red burgundy, burnt orange and cactus green. You can come as you are in Aldea; keep things chic for Cinco.

Hotel restaurant

Life’s all about balance, an ethos practised at all-day Aldea, where soul-warming Mexican favorites share space on the menu with lighter, healthier fare. And the landscape isn’t only respected through the local ingredients – a table-dotted terrace surveys the undulating scenery from its hilltop perch. Chef Fernando Labra also takes the helm at dinner-only Cinco, the hotel’s fine-dining restaurant. Seasonal, Baja California-sourced produce shines on the Asian-inspired menu. Though a stay here will encourage you to revel in a slower pace of life, there’s the Roka food truck serving Mexican takeaway bites and a grab-and-go bakery with home-made pastries, for when you want to scoff something, quick. 

Hotel bar

As golden hour casts its glow over the valley, head to Atalaya and admire the tangerine-tinged terrain from the floor-to-ceiling windows. Naturally, there are plenty of slip-straight-down vintages to choose from, plus a list of punchy cocktails. Emulating the starry night sky outside, the ceiling is strewn with hanging bulbs, so there’s an air of twinkly-eyed romance wherever you nurse your nightcaps. And you can try before you buy at the hotel’s winery, Pictograma, which was founded by one of the valley’s most esteemed oenologists. The project solely dedicates itself to the Grenache grape and the result is a vast collection of red, white, rosé and sparkling wines.

Last orders

Aldea serves breakfast from 7am–11.30am; lunch from noon to 5pm, and dinner from 6pm–10.30pm. Cinco is open for dinner only, from 5.30pm–10.30pm. Atalaya pours from noon until 10.30pm.

Planes

It’s a scenic 90-minute drive from Tijuana International Airport to the hotel; over the border, San Diego International Airport is two hours away by road. Staff can arrange private transfers from both on request.

Automobiles

If you’ve hired your own set of wheels, you’ll find a car park at the hotel with valet services (both are included with your stay); otherwise, hire a designated driver to ferry you safely between wineries.

Worth getting out of bed for

After you’ve stretched out in a yoga class, returned from your morning hike, mastered a vegan cooking class, practised somatic breathwork or a gratitude meditation, and — accidentally — dozed off during a sound bath session, it’s time to counter all those wellness offerings (which are included with your stay) with some wine. August marks the start of La Vendimia, or harvest season, and several festivities dot the calendar, such as tastings, workshops and concerts. But with a glut of wineries dotting the vineyard-laced valley – several women-owned, most focused on low-intervention practices or creating biodynamic blends – wine flows freely year round.

 

Local restaurants

Stop at light-filled Parador Mercedes for hearty Mexican-inspired brunches with a few American classics thrown in – chilaquiles, breakfast burritos and bacon-topped pancakes are all firm favorites. No one wants to be the person taking a photo of every plate, but it’s hard not to be at Malva, where garden-fresh fare is artfully presented in an alfresco setting. Plus, the next-door winery is deserving of a postprandial pit stop. Don’t be fooled by the mountainous setting – the sea is only a few miles away, and Conchas de Piedra uses this to its culinary advantage. A seafood-centric menu impresses with oyster-crowned platters, zingy ceviches and perfectly paired wines. 

Local cafés

Caffeine fiends flock to Das Cortez, an open-air café with sun-kissed mountain views. You can add lavender or Mexican mint syrup to your brews, or be a purist and sip on something simpler. Sure, you could get a classic coffee at Electric Coffee Roasters, but curiosity might win out with specials like house lemonades, espresso topped up with tonic and bottled cold brew.

Local bars

If you’re in the valley, chances are you have a long wine-focused wishlist to tick off. At the top of ours is Vinícola 3 Mujeres, a laidback winery with vista-framing bougainvillea, a cavernous tasting room and seasonal restaurant, plus plenty of organic wine, of course. Swap wineries for wine bars come evening – at garlic-shaped Bloodlust, you might feel a carnal desire for their tangy orange wines, bubbly pet nats and mezcal-based cocktails.
